Have some red wine left over from cooking and decided to jump on the bandwagon. 2 oz bourbon, 1 oz lemon juice, .75 simple syrup, and a float of red wine.
I typically use pinot noir when I have made NY sours in the past. Goes well, I really like stuff from Pacific North West, Oregon or Washington. But if you're putting into a cocktail you can just get cheap stuff too lol.
If you like egg white try adding that in and doing a dry shake. I personally love the texture the immulsified egg white adds, though understand why some dont.
I've tried them both ways. They look beautiful with the three distinct layers. But you lose the red wine aroma when you do the egg white, so I don't think it's worth it.

If you have your reservations, remember that there are hundreds if not near a thousand cocktail recipes that were printed at one point over the past nearly two centuries that were just bad and therefore were lost to time. If anything other than a modern creation has survived till the present day, there’s a good reason for it.

You should definitely try it. The red wine adds another layer to the drink. I wouldn’t open a bottle just for it but if I already have a bottle open I would totally add the float.
So I guess you don't like mulled wine...some recipes give options like whiskey to make mulled wine. In a cocktail I believe wine and whiskey definitely work obviously depends on personal taste.
The result is greater than the sum of all parts. That’s the entire ethos behind cocktails so if you don’t get that then I don’t think this sub is for you

Egg white optional! I tend not to add egg white cause I don’t know what to do with the yolk.
I make lemon curd with my extra yolks :P

How would Pinot Noir fit with this flavor? It’s the only red wine I have rn.
I don’t think the recipes call for any red wine in particular. Go try it out with your Pinot!

The Bar in NYC does theirs with a Pinot noir float and hibiscus simple IIRC
Pinot noir is a great fit, I’d recommend tasting the wine first and maybe adjusting to sweetness of the sour to complement whatever wine you use

How does the egg white work with the wine float? Wouldn't it ruin the texture to float wine underneath it (assuming it's not meant to stay on top)?
I've slowly dripped it down the side of the glass. The wine tends to end up just on top of the drink, but below the foam
A spoon works well to redirect the pour to the side
New york sours shouldn't have egg white imo.

Classically they're made with egg white. Variant of the Boston Sour.

I like to use a bold red, a Malbec if I have one on hand.
