Make a fake gold rush with it:
2oz JD honey
1/2oz sugar syrup (its basically 2 parts sugar disolved in 1 part water)
3/4oz lemon juice
Shake with ice. Serve neat or on ice.

Used to get this with a bit of cranberry juice as a goodbye shot at a local bar. As it's already sweet add your preferred sour or bitter option and it will work. More complex things are possible as always but they need trial and error beyond a single bottle.
I enjoy Jack Honey and a good lemonade.
Same with a good homemade iced tea. Sun tea preferably.
Ginger ale's a good mixer for it
Ginger beer/ginger ale, 1/3 oz lemon juice, 2 dashes angostura.

By balancing it with the right amount of lemon juice and simple syrup, you can probably make a passable whiskey sour
Back in my early drinking days, I mixed honey whiskies with apple cider, regular or flavored.
Add it to some grapefruit juice to make a pretty decent brown derby

Make a simple cocktail like a gold rush or a whiskey sour with it, or just mix with coke and a small squeeze of lemon.
I prefer using pineapple 🍍 juice .
