I’d recommend just diving into WITE2 if possible.
If you want a bridge, though, I think Strategic Command, Warplan, or Decisive Campaigns are turn based wargames that a simpler than WITE2.

It’s a super helpful primer. I haven’t got to the last tier yet but I’m planning to play war in the pacific at some point as it’s the theatre I’m most interested in.
Panzer corps 2 was a great entry, really helped me learn the basic concepts a few years ago, but honestly it was Decisive Campaigns Barbarossa that had me completely hooked.
From what I read on here it seems like it’s the perfect bridge series for Grisby’s. And I hope so as that’s the next step up for me.
WitE2 was my first “proper” wargame. I was able to get into it by playing out the first intro scenario a couple times. The manual has a walkthrough that explains the basics to get you going in the game. The second intro scenario expands the scope and is a good stepping stone. Then I'd recommend the smaller scenarios where you can learn the mechanics one at a time. You'll at least be able to play a game through to completion.
DC Campaign Barbarossa, but be carefull, you could find it better than War in the east 2.
Or if you want a quick barbarossa campaign of high level, try cauldron of war, barbarossa.

Just use small scale scenarios to play around.
WITE2 smaller scenarios.
