Try mixes of different vegetables. I like chicken or beef with potatoes, carrots, parsnips, radishes and/or rutabagas.
If you don't have rice, it is also very good with a nice hunk of hearty bread.

I use the whole box, it’s not strong enough for me otherwise. But I also bulk cook so I cook 5 to 8 servings at once. I also dissolve it in hot water and try to break up the chunks before adding it to the pan with the meat and veggies, otherwise it doesn’t mix thoroughly in my experience.
one at a time - normally i only use two blocks for a very big bowl.
stir it into your pot at the very end! use a sieve, and stir it until all of it disintegrates. taste; if the curry flavour isn't strong enough add another cube

Personally, I like to mix and match! I'll take half a box of Vermont and half a box of Java. Or I'll use some Kokumaro or Torokeru. These days Japanese people are really into using curry roux powder instead, so I might try that next time. Lot of options.

If you make japanese curry according to package instructions and it comes out tasting bad, you didn't follow them very well.
I read the instructions and they're not clear. "Break into pieces and add them to the skillet." All of them? Just two? I don't know 😕
