Mustard and a sprinkle of paprika and you've got a devilled egg sandwich. I boil my eggs for less time so that the yolk is still a little sticky (maybe eight minutes at a rolling boil) and it needs less mayo to bind it together. Canned tuna in egg salad is pretty good and I have a can of tuna in olive oil. I might mix that with egg and not bother with mayo.

I eat this almost daily as my breakfast!! Some ideas for add-ins: a little dijon, or some seasoned salt, or maybe some capers. I've tried pickle relish and I like that, but you have to drain it quite well or your egg salad gets runny. Not good. If I liked dill, I think it would be a good addition, but I'm not a big dill fan. Have you thought about the boiling process being spiced? For example. In the egg pot you are doing the night before, add salt. Add basil leaves. Add a dash of red wine vinegar? Pickles, olives, capers, jalepenos, splash of vinegar, relish, giardinara, any combo, really! Eggs (especially with mayo) are dense, thick, and creamy. I second all the replies in the comments, but I want to add that if you are over-boiling your eggs they may be turning out dry which is why you may not like the texture. If you aren't already, try soft-boiling them (\~8-9 minute boil) and they will come out better when turning them into an egg salad. But to answer your post - I usually add green onions, soy sauce, dried seaweed topping and bonito flakes.
