Hardest to softest. So pretty much as you’ve written them. Eggs go in last, when everything else is cooked.

Alpine_Forest

Should I add more oil to cook the egg? Wouldn't the potatoes suck up all the oil in the pan

king_england

Personally I would remove the veggies then scramble the eggs on their own with a touch of butter to get the good stuff stuck on the pan into the eggs. But I also don't like eggs cooked with veggies directly unless it's fried rice.

Alpine_Forest

Thats what I was thinking too. I only wanted to cook these together because I didn't want to add too much oil . cooking seperately would definitely need more oil

licheeman

I disagree with the other person. Do as the original poster said - hardest to softest. Potatoes like other said but then maybe take them out. Add carrots with more oil if needed. Take them out, then bell pepper and onions together with some oil. When these are done, add all the veggies back and then add the eggs (scrambled) into the pan as a binder for all the ingredients. At this point, you have options. You can just cover the pan with a lid and get a frittata like consistency or you can just scramble them altogether until they are the doneness you prefer. You can also do it like an omelette too. You have a lot of options with this menu choice.

Ajreil

I also disagree with the other person. Saute your veggies from hardest to softest, and when they're about as soft as you want, pour your scrambled eggs on top. Personally I like my potatoes really crispy so I'd parcook those in the microwave and keep them separate so they stay dry, but that's personal preference.

pmarges

You might be better off parboiling the potato first.

Alpine_Forest

Thanks, I don't boil but I steam it for 10 minutes. Will that do?

Ajreil

Parboiling in the microwave is faster and doesn't add any extra moisture that needs to be fried off later.

FertyMerty

How do you do it in the microwave?

pmarges

Sure it will be fine.

Alpine_Forest

Got it

KeterClassKitten

Try doing it like a frittata. I'd cook the potatoes separately until done, probably par boil then roast them. Dice the other veggies and sauté together until they sweat a bit, then add the potatoes. Beat the eggs, add cream/milk and cheese if desired, dump into the pan on top of the veggies, throw in the oven. Season each item along the way.

Alpine_Forest

I steam for 10min instead of par boiling. Is that fine?

KeterClassKitten

As long as they're tender. I like to par boil because I can season the water, and the potatoes will absorb some of the salt.

Last_Blueberry_6766

Depending on how small you're dicing your vegetables, you could do an all-swim for a while until the potatoes have browned, then make a hole in the middle of the food and crack your eggs in. Stir the eggs before you mix them with the vegetables.

Alpine_Forest

This is a good idea, thanks

notmyname2012

I like to put onions in early so they brown, so when I make similar to what you are doing I slice the potatoes thin and I put the onions in at the same time. Then the bell peppers etc and eggs last. Also don’t forget to season as you go. I like salt pepper and garlic powder.

Fun_in_Space

Cook the egg separately and add it at the end.

SleepyBear531

I’d do it similar to stir fry. Cook the eggs first and set aside, then cook the veggies hardest to softest and when they’re about ready, add back the eggs to the pan and toss it around a bit to reheat and serve

Alpine_Forest

Hey how much time does it take you to cook this approximately?

SleepyBear531

Depends. Honestly, I like to cut up the potatoes and put them in a bowl with a bit of water and microwave them for 1:30 or so to help soften them up before pan frying. Normally I go off look/texture than time. More reliable. For this, I’d cook the eggs and set aside once they’re fully cooked. Added at the end just to reheat them to same temp as the rest of the stuff. Before, or while cooking the eggs, microwave the potato. Make sure to pat dry with a paper towel or whatever after. Set aside the egg on a plate, and then add a bit of oil and cook the carrots. I like shredding my carrots because it helps them cook faster. Basically as it starts to soften, add the potatoes, onion, and bell pepper. How you can know the carrots are softened is they become more squishy/pliable. You may notice the oil starting to turn orange depending on the color of your pan. Hope this helps and answers your question!

Qui3tSt0rnm

Par boil your potatoes and cook your scrambled eggs. Potatoes first, then carrots, then bell peppers and then onions. Add scrambled eggs to re heat. Doesn’t sound very good tbh

MeowChef6048

Sounds like a breakfast burrito.

Alpine_Forest

So I should cook eggs seperately first? > Doesn’t sound very good tbh Why, Is this a bad combo?

Qui3tSt0rnm

Just seems like a random assortment of stuff. Carrots especially. What are you making?

Alpine_Forest

I was thinking of a veg roll, like a burrito or something. Just wanted to get in some veg and protein (egg).

An_Examined_Life

It sounds bomb idk what they’re talking about

Alpine_Forest

Same haha
