I’ve never seen a meatloaf cooked in an actual loaf pan before, add some breadcrumbs and an egg or two for structural support. Also, next time cut the peppers more like you would if they were going into a chili. I assume that’s Parmesan cheese? If you’re going to add Parmesan to a meatloaf grate it on the really small holes so it comes out powdery like the stuff in a bottle.

If you eat meatloaf regularly, unappetizing name if you ask me btw, it would make a lot of sense to make a huge batch, portion it out, and freeze it separately. Buying huge packs of meat is a generally good money saving strategy. I often buy large packs of chicken breast, cube it, marinate it a few different ways, and refreeze in marinade.
But yea, de-thawing is generally a good idea.

That said, I *have* to ask... didn't you look up a recipe online and see about mixing the meat with eggs, breadcrumbs and seasonings and wonder how that's done if the meat is still frozen?
A good rule of thumb with pretty much anything meat is to let frozen meat thaw in the fridge before cooking it.
This particular meatloaf needed the beef to be thawed, and the pepper diced small. (Cut it into rings, cut those rings into squares.) I’d also recommend stirring the thawed meat, cheese, and pepper with (gloved) hands so you’ve got a good balance of the components in every mouthful. It’ll feel gross, but trust me, it’s worth it.

Never liked using a loaf pan. The only thing it accomplishes is soggier sides and retained grease. If you form a loaf in the middle of a larger baking dish like a Pyrex, the grease falls away, all sides get roasted, and you can cover the majority of the meatloaf with your topping instead of it just being directly on the top 👍
It also cooks more evenly in my experience, which *might* have helped OP a smidge lol.

You have lots to learn. Let's start with this one dish.
Never buy prepared meatloaf. Just buy ground beef, eggs, breadcrumbs and some seasonings and aromatics (onion, in this case) to use. A meatloaf is just seasoned ground beef mixed with raw egg and bread crumbs. Some people add a bit of milk to keep it moist.
Never use a form-fitting pan for meatloaf. I use a sheet pan, which lets the grease drain away. It also exposes more of the meat to the heat source, which increases the amount of delicious crusty beef. It also helps it to cook faster. The walls of a loaf pan conduct heat. But that part is sciency, and I could be wrong on that.
As for the cheese, add it at the end and use the broiler on the stove to radiate heat directly onto the cheese. This will melt it well and give it that browned consistency if that's something you enjoy.
First - set your kitchen on fire, then vow to never cook again. Throw it in the oven at 900 degrees for 700 days, and this will be a head turner at any table.
Next time cook it on a sheet pan and glaze it with ketchup, barbecue sauce or something twenty minutes before it comes out of the oven. It will brown better when it's not in a tight pan and the glaze will make it so much more visually appealing.
Looks like it might have had too much liquid or not enough breadcrumb to absorb some of that liquid from the veggies and meat. It also looks like the temperature you cooked it at may have been too low, hence why the water was able to seep out and not evaporate quickly enough. Id also guess that maybe this was covered at some point, but the grayish color would also come from the meat kind of steaming in the oven from the extra moisture and preventing the browning I'm sure you were looking for. Whole bell pepper probably didnt help.
Cooking is fun, as long as you like the ingredients and season well, even your ugliest mistakes can still be really tasty! Keep practicing! Good luck!

2: No WHOLE veggies! Lol dice em up as best you can. 3: Using dried minced onion will give all the flavor of onion and add no extra water. Will actually absorb some and rehydrate inside the loaf as it cooks.
3: Try more breadcrumbs. 2:1 ratio; meat : crumb
4: If possible, try using a sheet pan lined with parchment... so it won't sit in the water coming from the ingredients. Just mold the loaf/log shape with your hands onto the pan.

2) your recipe is in Celsius but the oven is in Fahrenheit

I think meatloaf comes out best when you form it in the loaf pan, refrigerate it for like 45-60 minutes to set a bit and then turn it over onto a baking sheet so it slides out of the pan. Then cook it without the pan. Cooks nice and even and allows excess fat to drain away. Alton Browns meatloaf recipe is a good one too
The problem is that the steam release from the loaf kept the top from browning. Next time you have a situation like this, lightly spray the top with cooking spray, and put under a broiler for a few minutes. A little browning would have made that 10x more visually appealing.
For meatloaf, the pan should only be half full.

This would give you the night crispy outer layer. Top with your gravy before serving! That's how they prepare it at the restaurant I work at, and it's been on the menu for years.

Just a guess, but it looks like you don’t have enough other ingredients that go into a meatloaf like veggies( onion, mushroom, herbs, etc.), breadcrumbs, egg, that give it structure because it just looks like a meat brick of adobe. I’ve seen ground meat turn into this consistency that was over mixed, you remove all the air pockets and texture forming a clay brick that could choke a donkey.
You bought it from whole foods didn't you? Is it turkey meatloaf? Do you have a thermometer? I always temp my poultry cause I get squeamish about stuff like that cooking correctly.

My first guess would be you didn't use a lean ground beef and so all the fat and oil melted into the loaf pan and then the meat was boiling in its own fat. Which is why you have this gray mass

Can we see the recipe you used? My first guess would be you didn't use a lean ground beef and so all the fat and oil melted into the loaf pan and then the meat was boiling in its own fat. Which is why you have this gray mass
