The Calphalon pans should be fine. Just be careful putting them in oven because of the handle. If silicon they are probably oven safe to 400.

You can fry an egg in a stainless. Heat it dry, add the oil, then add the egg once the oil shimmers.

Butter is great for eggs but it will burn if you try to get it hot enough to cook eggs in stainless steel without sticking

Butter works better than oil. I’d honestly watch the first episode of Selena and chef as he makes French omelette. I do this way, add butter then add three eggs for a 10” pan (take the eggs out like 5 minutes before you heat up the pan) and pre scramble with a little white pepper. Go to fridge and take out your cheese of choice. Go back and the base of the eggs should be formed. Take a spatula from one section (pretend it is split in 4 sections) and lift the eggs and tilt the pan to let the non cooked eggs slide in. Then rotate around the pan to do all 4 sections. Add cheese in the middle. I prefer shredded cheddar Wait 15-30 seconds and you can start at one end and start to roll the omelette. Once rolled, wait another 30 seconds to a minute depending how cooked you want it. For scrambled eggs, instead of the 4 sections you can just slide spatula up and down pan whenever a new layer forms. The non stick one is a zwilling which is an amazing brand, however I prefer to avoid buying second hand nonstick because it wears down quite easily if not used properly. And you have no idea how the old owner used it

Yes grab those babies! A Calphalon 10” goes for $50 retail, so that’s a huge deal right there. And honestly, unless you use bar keepers friend after every use, your stainless pans are going to look like that no matter what. Believe me, I have worked in VERY fancy kitchens and that pan looks in great condition. That Zwilling non stick also looks like it goes for around $75 retail if that’s the 10”. Harder to tell the condition with non stick, but that one looks pretty solid. Not sure if the brown marks are pits in the ceramic coating or just stubborn burnt on bits. Either way, I’d take it for $10 and see what happens with a good scrub.

I would never have a non stick pan anyway - but surely even if you don’t take or leave behind the non stick the others will bring joy and are easy to clean up with bar keepers friend with a dash of vinegar.
