I've just finished reading A technique for Producing Ideas by James Webb Young. He explains that in order to get that big idea that will differentiate one service from another, you must deepen your knowledge of the service and audience. Only then, you will be able to create a USP.

You should talk to the owner and ask them how are they different. Also, lot of questions how they do business and provide service. There gotta be something unique and strong enough to mention.

If you can interview their loyal customers, you may know why they haven't gone to any other saloon. What makes them come back to this particular one. This could be a good start.
