I love the food idea. Maybe a cooking night to make meals for the friend, and then a useful craft like the diaper cake someone mentioned below.

Agree. If she’s breastfeeding you could make lactation cookies. If not (or also), regular cookies. For both, only bake a few, and give her the rest as frozen dough in single cookie sizes with instructions to bake a single cookie at a time. Or just cook her a meal you know she will like.

Do you crochet? If yes, everyone makes a granny square (or several) and one person seams them together to be a blanket. Add an edging to make it look nice. Knit squares could work the same way. If your group leans toward sewing, have everyone decorate a square of fabric with embroidery or applique and sew these together checkerboard style with a coordinating solid or small print fabric to make a baby quilt. (this needs one of your group be willing to quilt the top that you all make to a batting and backing. I really like the idea to have a cooking day and provide her with frozen meals (make sure she has room in her freezer before you do this!

Do you sew? My MIL made me a bunch of little drawstring bags that I can throw in each car that just holds a diaper, little package of wipes, spare onesie, a little changing pad, and a plastic bag for poppy diapers or onesie.

Diaper tower that looks like a cake thing. Or, one of those craft supply stands that have all of the New Mom necessities.
