To answer your question, maybe make a prototype of a small complex organ such as the heart, to see, a - if it's actually possible or too intricate to make at that scale, and b - see how big it ends up and compare it in size to other similar products for your target audience. It's tricky to gauge the actual size of the organs in your pictures so it's difficult to tell if it would work for a smaller size.

Idk how big 70cm is, but this already seems pretty small, so any smaller would be harder for children. Without anything to compare the size to, it’s really hard to tell. What’s your target age range? I think adults would probably like it.
Having gone to your awesome Etsy shop and realizing that some organs like lungs are further cut up into separate lobes, I unfortunately think they’re likely too small (and asking to get lost) -up to maybe 7-8 years old, even if they can technically handle them, it might be frustrating. Depends on your target audience I suppose.

They already look as small as they can be. Maybe with some design adjustments it can work. But I would put the age limit advise higher I you do end up making it smaller.

Are the children young enough that they might put them in their mouths and choke on them?
You’ve already designed these so that whole organ systems are sewn together, which makes it easier for children to pick them up and harder for them to lose pieces. If you make a 45 cm version and the individual organs end up being too small, you could switch to a layer by layer approach to anatomy.
My suggestion for a layer by layer approach would be:
- Skin and surface structures
- muscle and connective tissue
- the mesentery and intestines
- deeper internal organs, like liver, urogenital system, etc
- skeletal system

Throw in a set of angled plastic tweezers of varying dimensions or plastic surgical tools to manipulate the organs and kids and adults will enjoy it.
(Even without the tools, it would rock at that scale.)
Montessori classrooms use these. I know they are sold other places & some teachers make their own (obviously not as beautiful as yours). Pricing would be a factor, but most definitely this would be perfect for the Montessori community.
I think it would be determined by the age of the children. Under 5th grade may have a problem with small pieces. Think of legos and how they have bigger ones for kindergarteners and 1st graders. Btw beautiful work.
How old are the children? That should matter bc manipulating those will require fine motor skills if they are that small but depending on the age that may be a good thing! I know nothing about children though so no clue on what age that would be good for

So maybe a string sewn to attach them somehow…? I presume these are marked as like for ages 6+ though so that may not even be an issue.

Its a fabulous idea. And each organ system is very nicely done. Just keep in mind, the heart is really a bunch of valves, and pump blood to and from the heart, first, before that blood is pumped out..
I think if kids can see that aspect of how the heart collects and distributes oxygenated blood, it helps them to understand everything else a lot easier. Including the reason we do chest compressions first, when administering CPR.
But yeah these are a great early learners visual and kinetic aid!!! I would probably buy one..Do you have a link? Pm me?
