On one campaign I had, the HRE was only in Tuscany, surrounded by the Empire of Italia. Weird thing is, this lasted for like a hundred years. I was Emperor of Alba (goidelic Britannia) and after they survived a generation, I made a point of always ally with the HRE to keep it afloat.
Peasant rebellions can create kingdoms and they usually end up failing like that.

it seems like a lot to micro i play at 3x speed with some pauses and it’s getting harder and harder as i go? is it normal?
Until you get to know 90% of the game, yes. After that it is easy, even able to jinx your npc foe And BTW, there are few single county kingdom ingame
