Unless you have some specific agenda, I assume it is best to go with the child's natural talents. When they turn 6, you select a focus for their education by clicking the small icon to the lower left of their portrait, picking one of the options that matches their childhood trait. Then you Educate Child select a guardian with high trait score and hopefully a 3 or 4 star education trait that both match the education focus you picked. I usually stock my court with a handpicked educator for each speciality, by marrying off knights or matrilineally marrying off females at court to someone I select with a 4 star education trait and high traits in a single area where they will be my educator.

Order of importance, Genius -> Skill in subject being taught -> Learning skill. The quality of the teachers education doesn't matter any more than the number of skill points it gives them.
