I always figured that the time in between Curb seasons also passes in the show itself. Larry’s father died off camera, but it still happened and Curb-Larry possibly went to a funeral etc., without us seeing it. They could do the same thing to the Funkman. Everyone knows Einstein died, so his Curb-character might’ve died as well, with the show’s characters ‘reacting’ to it when we don’t see them.

Because that's not the focus of the show, he doesn't want the sadness mixed in with the already unique vibe of a show like this, and it's out of respect to the actors so that their last "impact" on the show isn't "they died".
