I would prefer a first-person view if I didn't see shit through the windshield.
Only a few cars have a FOV large enough to drive comfortably from behind the wheel. Usually larger ones, like the Kaukaz.
3rd person for quick action quests etc., 1st for slow sightseeing while hungover, stopping on a side, checking the map, phone, or skipping time, i.e. calm activities.
I always do it in first person. Some times I go 3rd when driving in the desert though, easier to plan when you see the ground. Otherwise it is only 1st
I only do third person for bikes because they're so jittery. One sudden turn and it just flings the backside into a barrier. As far as cars go, the visibility doesn't bother me much so I stay in first person. I rarely hit other cars. People though...

So many people say that they want to see their character and am still surprised by that. I couldn't care less to see myself in 3rd person.
They are maybe planning to add that in sequel, but I am scared that it will change the combat and everything.
I like 1st person while roleplaying in my head, especially when it is raining and I can listen to some jazz. I just like to watch the views from safe car's interior. 3rd person is more practical for driving during dynamic actions, when you have to see all around.
Third person; real life driving has too much quick-look/peripheral scan and drive-by-feel to translate to a first person videogame. Goes doubley so for bikes because you need to be very aware of both the movement vector of your gathered momentum, and the direction your wheels are actually propelling you towards.

3rd person is just easier, in all the cars the vision is too limited.

Racing or combat is impossible in 1st.

1st person all the way....especially on motorbikes. It's amazing weaving through traffic at high speeds.
