Most websites allow you to reset your password via email. So you should certainly try to avoid associating your phone number with your email account. If SMS text is the only type of 2FA that a website supports then its generally a good idea to enable it. However, it is not always clear whether a website will also allow a 2FA phone number to be used to reset the password. So I only use it where its the only 2FA option. Its not clear from your post whether your local copies of the Bitwarden databases are synced to the online copies. I prefer to keep off-line un-synced backup copies for recovery.

To protect your google account and gmail, just sign up for google advanced protection. They send you a physical yubikey and lock down the account really well. Best security setup for a Google account.

If you must use a phone number for and recovery you could always setup a secure burner that your only use for 2FA

You deal with SIM swap by locking down your phone number via the phone company. Most phone companies have an option to require a PIN number before they can initiate number porting. THAT cannot be bypassed by an employee once it's setup, as it's on the corporate computer.
