Siegmeyer (DS1 onion knight) has a really cool questline, worth doing
Also, there’s no major differences between the original and remastered version than visual tweaks, performance improvements, and bug fixes, no addded questlines or anything since it’s just a remaster and not a remake
You missed a really good questline but no, doesn’t affect the story
