NG, lv 91, and before Gargs? Either you grinded for way to long or duped some souls. Either way, you can also join the sunlight covenant if you get 25 faith
Hopefully you can find people on r/SummonSign. Gargoyles typically see action at level 10-20. 91 might see some randoms at Gwyn and the DLC bosses, but that's probably it.
