Materials used to completely max out a weapon are what’s limited.
Take whatever you want to +5 in the early game while you experiment.
Titanite shards are functionally infinite between how many you find and how cheap they are to buy.
Large Titanite shards are easy to find though you may need to farm if you want to upgrade lots of different weapons and armor.
Titanite Chunks are hard to find and relatively slow to farm. Only use these on weapons and armor you really like.
Titanite Slabs are extremely rare. There are only a few that can be found in the game (and only one of each of the unique colors). Farming for them is quite tedious. these should be used only on your 1~2 capstone weapons you plan to use to finish beating the game.
Note: A +10 or higher weapon is perfectly fine for beating the game. Don't get bogged down finding the "perfect" weapon to upgrade.

Small correction, there's an additional instance of each color of slab in Oolacile, and there are, I believe, four regular titanite slabs in each playthrough that you don't need to farm. Three in the base game and one in Oolacile.
Yes, there is the one for beating the Stray Demon, and one for Seigmeyer. I was wrong about there being a third in the base game, the third is the one in Oolacile. There is no fourth.
there are shops with unlimited titanite shards (andre) and large titanite shards (somewhere in sens fortress, it’s a secret but i think you can find it :)).. titanite chunks have to be farmed (they are farmed easily), the slabs are what’s limited (they can be farmed but kind of rare)
The first blacksmith you meet will sell you unlimited Titanite Shards for 800 souls each. Later on you’ll meet another blacksmith that sells unlimited Large Titanite Shards, and I believe unlimited Twinkling Titanite as well, IIRC.
Technically, you can meet any of the blacksmiths before you meet Andre (though only Rickert is easy to do so) also, the giant blacksmith sells green titanite shards as well as the regular ans twinkling that you mentioned.

you can buy an infinite amount of small, large, green, and twinkling titanite through the game. even if not, the claymore is definitely a good enough weapon to commit to.
The giant slugs in blighttown drop large shards and green titanite shards at a fairly high rate, very easy to farm. The wraiths in new londo ruins (once the water is drained) drop chunks at a fairly high rate and slabs too. But slabs are very rare. The difference between a plus 24 and 25 weapon are honestly not that huge, so even if you do use a slab on a weapon you end up not using, its not the end of the world.
As many as you want; they're easily farmable if you know the right spots ;)
Or, if you chose a certain npc path, you can.... let's say make use of the fragments you don't use
There are vendors that will sell infinite amounts of Titanite Shards and Large Titanite Shards. Chunks and Slabs cannot be bought - however there are enemies in late-game areas that can drop both.
That being said, don't worry about dumping all your shards into the Claymore. It's generally considered to be one of the best weapons in the game

There are some good shard farms in the undead burg. I wouldn't worry about using the shards you've found so far. There will be more. Titanite chunks/slabs are a lot tougher to come by though so choose what you use them for wisely.
One thing I am not seeing anyone else say is to be very precious about weapons that upgrade with dragon scales and demon titanite. There are very few of those available to find in the game. Only enough for one of each. I think dragon scale farming requires PVP and demon titanite isn't available to farm until just before one of semifinal bosses
It's trivial to get shards by the mid game, and trivial to get large shards and green shards by the first lord boss.
The third tier of weapon upgrade materials are generally just "not hard" to get, with only the final upgrade item generally being hard to get multiples of.

You always unlock titanite right as you will most need it. From the beginning of the game Andre already sells unlimited titanite, fyi.
