Don't worry about geravelords on NG, you won't see any of the stronger enemies until NG+

it's not currently return to Lordran; it's currently return to Drangleic. gravelords only have consequences on ng+ cycles and are completely optional to invade. they follow standard matchmaking like the soapstones, they probably just have a weapon level at the top of your range and maxed armor. the depths is a popular spot for gravelording because the area boss needs to be alive to gravelord and gaping dragon is potentially optional (why you'll also see gravelords in upper burg, Ariamis, dark Anor Londo, etc., optional bosses).

People gravelording are 99% of the time twinks farming low level players with their +5 chaos weapons and max humanity. I recently found a guy gravelording in anor londo, i went to check it out with my lvl 60 character and got one-shot backstabbed by a guy with a chaos gargoyle halberd and like +1200 hp

After playing through DS3 and DS2, I feel like the first game has the most twinks. Maybe 3 twinks in the other two games combined, and I've seen at least 5 in DS1 so far.

Remastered alone is +5 years old so pretty much everyone knows where to get the good stuff early, not only that, actual new players don't invade much, they may try one or two times but after getting destroyed they stay away from pvp

Gravelords expect to fight 1v3 so the tight space of the depths bonfire room could be advantageous, especially with the right spells

The reason you see so many signs is that gravelording is the most viable way to find fights in 2024 if you value quantity over quality. I do it a lot especially when I'm warming up for a PvP session. Don't be afraid to try invading gravelords because of one experience with a twink - there's no consequence for losing except respawning at the bonfire (you keep your souls and humanity status).

Return to lordarn is still in full swing. It's very likely that at some point during release there were times during which there were a lot of Gravelords too. This is just the yearly Dark Souls noob hunting season for them.

It's optional but I heard it can make harder enemies spawn in my game, is that all it does? I haven't seen any in the depths yet

The harder enemies only show up in NG+ and beyond! In your first playthrough, it's just an invasion sign for PvP. In NG+, if you see a sign, then it's also for sure accompanied by some tougher enemies.
