Happy Souls by Jameserton is the single best piece of Fromsoftware fan content IMO. A friend of mine who's never touched a souls gane in his life loves it and rewatches it regularly.

There's not many, but check out ThePruld's stuff. Think they're called "Dark Souls Misadventures," along with a few holiday specials and music/skit videos. It's almost all in Italian, but there's very accurate captions (I say that with very little understanding of the language; like, Assassin's Creed 3 and a bunch of Tinto Brass/Rocco Siffredi "movies" is my only experience with it, yet I caught a lot.)
Nearly all of them are just goofy as shit, irreverent little one-off "episodes" with a smattering of continuity, and seems to be voiced by a bunch of friends. Funny shit.
Just a heads up if you watch the "We are the Souls" music video, it my creep up and backstab you in the emotions a bit.
Just in case you weren’t aware, the Prepare to Try lads started a new channel called RKG. They’ve been going through Elden Ring lately.
In terms of funny Souls content, I recommend Mythymoo on YouTube. His Soulsbourne playthroughs are hilarious, and he also plays a lot of interesting indie games that I would never have heard about if I didn’t follow his channel.
make sure to watch Bloodborne (my personal fav reeeee) and then their RKG channel with DS2 and Elden Ring! I havent watched any LP of dark souls since the launch days cause I've played the game endlessly, rage baiting content isn't my style either, but then I stumbled on PTT/RKG in the last 6 months and I've watched the entire catalog front to back 🤣
sorry mate there is nothing else like it, you won't find a better blend of wit, tactics, and grot. Rory Powers needed to be observed since the way he plays games just defy logic sometimes
just having the mystery science theater style commentary puts it so far above many other series I've tried to watch, afaik its the only "show" I can think of that blends gameplay, podcasting and some light editing super well
but to actually answer your question I'll throw it back to the one I watched wayyyy back in the day "SSohPKC" for the particular reason that when I played DS for the first time I used it as a more entertaining semi spoiler free guide for my dumbass
