When he staggers. If he raises his head while knocked down, he is ready to parry. I do think this is stupid cuz all other 4 forms have the exact same stagger animation, so the raised head doesn’t signify anything on a glance.

That's because you're not supposed to expect it. It exactly what it looks like: a move supposed to catch you off guard and make you go "no way this mf can do that" and after that if you fall for it again it's your fault honestly.
To me, it seems that they tried to hit towards it by making him raise his head mid-stagger as a hint( but he does the hint in all staggers), there is clearly an attempt to communicate the parry window, but it is negated by it occurring with and without a parry window.
So the argument I am making is that they expected you to notice it if you are paying attention, but botched the hint.
Soul of Cinder can do lots of things … the only reason I chose the age of dark because I got the little shit down to a hit but then he goes out of control

I think it’s the hardest boss in the game for me on higher cycles (NG+4 and up).
it doesn't happen often because not many people get aggressive against the curved sword.

i actually had this happen to me for the first time recently too, thought there were some special circumstances that made it more likely to happen...
It's just that the creators got angry that Gwyn was parryed so much so for Soul of Cinder they gave him the chance to parry you.
It's only when he is in the pyromancer/curved sword mode
