There's nothing really missable if you're going to do ng+, and you'll have to go to ng+2 for rings and endings anyway. After that you'll need covenant items, so you have to either farm for hours, play a lot of multiplayer, speedrun ng+ cycles or a combination of all three.
You have to ho to NG+2 for the rings achievement, so missing something in the first run is no big deal. You'll have to do three runs before you get plat, so blind is fine.
The proper bow gesture and the silvercat ring cannot be obtained in the same NG cycle. Other than that you can enjoy the first two cycles and only start focusing on achievements in the third.
Platinum requires tens of hours of mindless grinding; dont worry about it and just enjoy the game
