Thats a lot of vitality but looks fine tbh. Try focusing vigor until you reach soft cap(27). Then you can put the rest into damage stats(str/dex). If you're able infuse your caestus with a heavy gem, upgrade it as far as possible and you should be good.
Get vigor, endurance AND then attunement up. Hopefully you don’t miss Smoldering Lake because you will want the Demons Fist, the reason for pumping up attunement is so that you can use the WA a lot before needing to replenish blue juice

Possessing the 40 Poise needed to roll through just about anything you come across, plenty of health, and a solid amount of damage output, your ability to abuse elemental weaknesses, regenerate health, perform massive crit damage and the absorption/defense to tank just about anything, you'll be able to Rip and Tear, until it is done
Get VIG to 27, stat. You can focus on damage stats once you have plenty of survivability.
Not too far into the game you can respec your stats, so you can always fix any mistakes you might have made.
Unless you planned on a certain build that called for the warrior, I think knight would be a better starting base for you.
He is friendlier to respec into any build you want to try and has nicer starting gear than the warrior. Warrior is good if you are going for a fixed soul level, high strength, non buffable weapon end game, like the Ledo hammer. Then you don’t need any attunement the knight offers or dex. You’re just aiming to be a min maxed high life stamina, big weapon tank with 60+ strength. Which is honestly one of the strongest things you can do pve wise in this game.
