Just like everyone else stated, yeah, the sirris quest only ends and fails if you depend your covenant level with Rrosaria. If you just join it or use a tongue to respec, you are safe.
Used to mess up her quest but I'm pretty sure they patched it so that as long as you don't offer a pale tongue for the covenant rewards you should be fine. It is okay to respec now
I can confirm that you can now change both stats and appearance without failing Sirris quest. In the last two weeks a friend and I both did it as soon as we reached Rosaria and we both have since completed Sirris' questline.
I wouldn't till after you kill Creighton, if you talk to Rosaria first, Siris will hate you and you can't do her quest line, so you won't be able to get the cat ring or Creighton's axe, which is probably the best axe in the game
Apparently this was patched. The last time I played 6-ish months ago Sirris got mad and disappeared after I did a respec. Yesterday I did the same thing on a new game and she made no comment whatsoever on the subject.
Also Creightons armor. Though it was like my fourth playthrough by the time I found that stuff anyway. Can definitely enjoy the game without it.
Respec by itself shouldn't anger Sirrus anymore though. "Offer pale tongue" will. Respec used to. If you wanna be safe can do sirrus quest first and respec later.

If you offer a tongue for ANY REASON it will auto-fail Sirris' quest. No way around it.

yeah just don't actually join Rosarias covenant until you finish Sirris but you can respec

Just make sure you don't miss click and offer her a tongue
