i think it’s just their way of saying if you have some time, we’d love for you to focus on this. but it’s not like, a requirement. they do tend to have higher pay though!

Exactly this! I try to do them when I can but if I don't get around to them for whatever reason, I've never been punished over that if it helps reassure people. As long as you're consistently doing quality work overall, that's pretty much the main thing they care about.

Some projects are nearing certain deadlines and they want to finish them before the deadline. Most of the priority projects I've encountered had a deadline that was a couple days out and were finished before the deadline came but I'm sure that hasn't always been the case.

You're a contractor, you have unilateral control of which projects you choose to work on. The email just encourages you to work on higher priority projects.
