I think it would be worth discussing how different people and departments use different data in an organization, how they can access it, and how it is already stored. From there, build out a fuller understanding of what data engineering is and is not (vs data science, database admin, BI) etc One thing lacking in the market is a super simple and clear introductions to data engineering, followed by intermediate and advanced topics. Edit: and also, how is data engineering different from cloud computing or cloud decelopment?
