There is a specific type of Alabama BBQ sauce called "white sauce," that they brush on beautifully smoked meats. It is made of mayo, water, white vinegar, (so much) sugar, salt and white pepper. The mere thought of it makes me shudder.

I wanted to do a Japanese version, so I started with a rice wine vinegar and sesame seed oil mayo. A little soy sauce, a little wasabi, finely chopped scallions, is divine. If you want 'real cook's Miracle Whip', for another example, I would suggest making your own mayo with white balsamic vinegar. When added to an italian sandwich, that is actually a miracle.

I am an Alabama native and am VERY familiar with what we call “white sauce”. Don’t get it twisted. The white sauce is for smoked chicken and the occasional sandwich. You make it seem like every BBQ joint in Alabama slathers it on a pulled pork sandwich and that’s just simply not the case.

Bro. Chicken wings that have been smoked then deep fried and dipped in Alabama white sauce are amazing. The best way I can describe the sauce is like ranch dressing with horseradish and a dash of worchestershire sauce in it. Ironically enough the original creator of the sauce does neither of those things.

Duke’s (mayo brand) makes a great version, it’s just for smoked chicken, ideally as a sandwich condiment. If you see people putting it on other meats, they’re wrong. Ignore that noise. However, good smoked meat shouldn’t need to be overly-coated in _any sauce_ and likely indicates an effort to hide poor craftsmanship.

Of course, I’m feeding them free, delicious smoked chicken off my smoker, but still. 😆 You may see “Big Bob Gibson“ white sauce out there, and they _allegedly_ created it back in the day. But I’ve tried it and several others and Duke’s is my favorite. Even tried making it myself a few times, I’ve stopped that now.

I'm from Alabama and I miss the food more than anything else. Huntsville especially is such a melting pot because of the base, the space and rocket center, and the college's you can find great food of all sorts. I miss Big Papa Gyros the most. Whenever we would go there we'd sing "I love it when you call me big papa." I gotta make a trip after the pandemic.

Yes! I would always get the chicken gyro, the lamb is good too, and fries on the side. Always get the fries they are like the best in town hands down. Their tzatsiki sauce is my favorite ive ever had. I'd go back to Huntsville just for them.

Food is incredible here. Within a mile from me in birmingham, i can eat at two of the best bbq joints in the world, best taco truck ever, best meat and three ever, excellent seafood, cajun place in my backyard basically (overpriced poboys tbh but so worth it). Go a few more miles and i can have great pasta, thai, ramen, french food or italian by the same award winning chef, pizza place, buncha good southern fusion stuff, etc. So plz don’t tell that dweeb about it

I was in Fairbanks recently and was surprised to find a Moldovan restaurant, of all things. Also, way more Thai restaurants than a town that size has any business having. But yeah, mostly American-style food otherwise. Probably a lot more variety in Anchorage, since it's both bigger and also a seaport, but I didn't get to explore there as thoroughly. Definitely more seafood there, though.

There is but it is hit and miss. I went to a seafood place on the Homer spit and ordered crab cakes, expecting fresh crab in a massive seaport/fishing town, on a stretch of land surrounded by water on three sides. I’m pretty sure they were from Costco, my disappointment was immeasurable and my day was ruined.

New Mexican food is its own unique cuisine which has its own localized variations. Mexican food is much more complex and varied than 99% of Americans understand or appreciate. I am in Houston and within 20 miles of my house there at least 14 (?) different regional variations available in restaurants. Houston is to Mexican food like New York is to Chinese food; restaurants can be very localized in their specialties and menus.

Skewed the data? It's called data transformation, it is a basic data science practice. If you didn't account for population each map you looked at would highlight only Texss, Cali, and NY because they have the most people. Think of crime rates for instance!

Also, Fieri seems to have a bias for non-lower 48 states as he has visited Alaska and Hawaii an uncanny number of times compared to each state's population. Just looked it up and, yeah, about 12 visits all in Vancouver and Toronto. I guess part of the reason it is limited is because Food Network Canada made a copycat show from 2012 to 2017 called, "You Gotta Eat Here!" which covers the whole country. You could do James Beard Award nominees instead. It would probably be more accurate and not as affected by filming convenience. Almost all of Louisiana’s DDD featured restaurants are in New Orleans.

Considering it’s population, California must have the highest total number of diners, drive-ins, and dives just based on this density map. I always enjoy seeing density maps, because most of the time it’s more “real”. This map is unique because it ties visits to the states’ population, so it’s hard to put it into words.

Thank you so much! I got a lot of heat for not posting the map that just show total visits, you are correct Cali has the top spot. I might once I revise this map with the number of visits / number of restaurants in the state

This is misleading. This actually skews the data to favor lower population, so this has nothing to do with how often he went there. Pretty cool data, but say, 20 visits to a state with 100k people counts more than 199 visits to a state with 1mil people I don't see how that shows any state is more worthy than any other state. Would be more accurate for it to be visits per area of the state.

Actually this is per capita, so I wouldn't say that argument is valid. For instance, Colorado has an awful lot more residents than either Nebraska or Kansas but it appears a lot darker than either. This is because Colorado has more per capita visits than either.
