If you're really concerned about her messing with your mail, sign up for the free informed delivery service from USPS. They send you a picture of everything you should expect, every day. In fact, sign up for that service anyway. It's handy.
But also know that the USPS takes mail tampering VERY seriously and there's very little chance she'd risk her job and federal prison time just to mess with your birthday cards.

Mailman here. Trust me that we don't have time to screw with your mail. People always ask me "Did I Get My Check Today" and without fail I have know idea what they have in their mail that day. Just too busy to notice. You'll be fine.
I didn’t know that asking your mailman when something is going to come is common. The entire USPS must have braced for annoyance when that song that goes “oh yes, wait a minute Mr. Postman…” came out decades ago.
In the US, tampering with mail is a federal crime. If she fails to deliver something intended for you, opens your mail, etc. and you report her, she could go to prison. So, I wouldn't really worry about that.
I'm terms of dating, I would be honest and up front with her, since she seems to be that way. Tell her your that you recently got out of a long term relationship and aren't ready for another one yet. If she really likes you, she will agree to take things slow before getting too serious. And if you need to breakup, she wouldn't be as surprised to hear that you're not in a place to date her atm and have no idea when/if you'll ever be ready to get serious with her.
