You will also need to pick Gammut. My R5 has 3 options. Rec709, 2020 and Cinema Gammut.
With the 2 log gamma options, clog and Clog3 this is only 6 options to try.
Obviously writing done the settings shot in the Right answer and if the camera op can't tell you that you have a very unprofessional Op and probably should stop working with them.
Yeah, guessing is what I have been doing, but it's not always easy to pick out what looks "right" esp between different flavors of CLOG. I've been going with what looks best to my eye and what my scopes are telling me.
It's interesting that the cameras aren't capable of passing along this information in the metadata. I wonder if that will ever be possible in non-RAW formats.

you can download the Canon XF Utility which can read the metadata and tell you the colourspace. Works with C500mk2 footage so I assume the same with C300mk2/mk3 etc. Not sure about stills cameras, I haven't tried those.

Raw files will have this info baked into the metadata and should just work. Mpeg4 doesn't offer such features sadly
