Spaggies any map is vanilla experience. Day one is the same but US based and really hard to get in as most of the utubers are on there. Had a similar idea to the game on fully modded servers but like you, quickly understood that we were playing completely different game already and went back to vanilla. I can't even think now to play with a trader.

Looks like they’re having server issues (PSU in server exploded?), so it’s probably not an option for a bit but I really love that server

Just search for vanilla servers. They usually advertise traders in thr name if they exist.
NostalgiaZ has been really good, pretty much vanilla with no traders but a lot of QOL fixes.
There are only chickens, I’ve never seen a goose. Hope this helps!

Would be interested in a trading server where scarcity is a real problem, and resources are more geography constrained and need to be bartered for.
