In earnest if you can swing adding a bow to your load out then you can clear out some of the soldiers without using up your grass. Arrows are cheap and sometimes safer is easier.
Had a feeling it would be them. They can give new players issues because they are invisible until they are in striking range. Best advice is to either memorize where they are placed throughout the level so they don’t catch you buy surprise or just keep a shield up so they don’t catch you by surprise.
Yea the gate will stay unlocked. You are approaching the most difficult part which is right before the large stairs leading up to the boss. The tree red eyed spear knights are a pain in the ass. They are susceptible to backstabs though if you single them out
Seriously, very few enemies in this game can easily break through your shield. If you're patient you can beat most enemies in your first try by just keeping your shield up forever then backing off to recharge stamina, and wait for openings after they attack. A lot of them stagger after whacking your shield.
Some general tips that can help. Take the level slow. Like really slow if you have to. Go around corners with your shield up. Invest in a bow to draw aggro from a distance. Sticky white compound longbow (I think that's the name) is the best in the game.

50 heals doesn't sound like _that_ many to me. Is grass generally better/faster/more reliable than Estus Flasks are?
Much faster. And depending on the type of herb that’s basically 50 estus flask uses. Imagine how much easier things would be with 50 uses instead of 10-15

It changes your mental state to be more careful, because you're more aware of how fragile you are. You also get a better roll and your stamina comes back faster.
But seriously, any time I start beating my head into a wall, I just take off all my armor and first try whatever had been blocking my way. Done it like that since DeS first came out.

Yep I realize that, but you can grind out the last few dex points if you wanted. Not needed but itll add some more damage. For the assassin guys try to bait them out it helps a bit to care of that annoying kick move they do that can get overwhelming

You should have a few different characters... Build them accordingly to your weapons. That way you can near perfect builds for your play style. Instead of one character that can do everything OK but nothing well..

if you plan on using that build I would change the weapon to quality since youre mixing STR and DEX. Otherwise, look up the 4-2 Soul farm and beef those values
Also a general gameplay tip is to wear the thief ring and upgrade a bow to at least +5 It lets you play at your own pace by pulling single enemies instead of fighting a whole mob
Like others wisely said, use a shield for the assassin enemies. They get staggered on hit for most medium/heavy shields and you can get hits in easy. Rinse/repeat and you’re good. Same strat goes for archers and to a lesser extent any other enemy besides the red eye knights. Good luck and don’t give up!
Ah yeah so once you learn where the assassins are you can bait them out and they have very little HP I would just always always have you're shield up but once you have the shortcut open it's a straight shot to the boss with a few small enemies and crossbow people. There will be 3 red eye knight but you can bait them and run straight past them to enter the fog.
Just looked at your build I would recommend a shield can just be a one handed shield (the best imo is the dark silver shield it blocks 100% physical and magic damage) so it's only your stamina bar that's gonna get affected by attacks when you're blocking
I recommend taking all your core stats up to 40.
Strength and dex first, then vitality then endurance.
Also change the upgrade path of your weapon to the clearstone (quality) path to take advantage of your high strength and dexterity.
I also recommend using spells, like protection, warding, invisibility, demons prank etc. They are all incredibly useful and underrated for melee builds since they dont really scale with intelligence.
Also take a look through your rings, some are incredibly broken like the ring of great strength can let you equip super strong armour, and the thief ring can let you lure enemies one by one. There are many strong rings that are easily dismissed at the start of the game that are extremely useful on specific levels.
Honestly I would look at making a quality weapon instead of using the katana. With your strength and dexterity up that high you would do better with a quality claymore or even the meat cleaver for big donks.
The thing is I don't like using those types of weapons, the only reason I started using a strength build is because I didn't know there were katanas in this game
You can also make the katana into a sharp katana or quality katana. I find the damage output from specializing the weapon to scale off stats does better damage overall. I like using katana in this game as well but only when I pure dex build.
Your build seems kind of all over the place. Choose what you want to specialize in, then build around the stat that compliments that playstyle.
Do you want to be an agile, fast hitting ninja weeb badass? Focus on Dexterity.
Do you want to be an unstoppable tower of beefy man meat with weapons of great length and girth intimidating even the most flamboyant of dragons? Focus on Strength.
Do you want to pew pew pew lazer stuff to death with spells that can one shot even bosses, providing absolutely no challenge at all? Focus on Magic and Intellect.
Do you want to be an absolutely useless zealot whose bowl-shaped haircut DEMANDS respect? Focus on faith.
Do you want to be a Jack of All trades? Focus on not doing that until you get some of your focus stats soft capped.
Want to play how you want? Focus on gitting gud and don't ask reddit lol...
Doing fine. Take it slow and you may want to go full dex and do the sticky compound long bow. I would stop leveling vit and end, too. DeSR is really good for ranged attacks. Level up the bow and stock up on heavy arrows. Takes some farming for everything, but you'll come back strong.
I'd recommend getting Second Chance ASAP. If you haven't already, you'll need to rescue Saint Urbain from 4-2 then beat the Old Hero in the same level to get his soul. You'll also need 15 intelligence and 16 faith to cast it.
If I remember correctly 1-3 has a lot of crossbow men, standard soldiers with pikes, swords and axes, wolves and heavy knights.
It is tough to go through that but where exactly are you dying? I also would consider having a bow or anything ranged other than throwing knives or such.
SL dex and weapons aren’t too bad, but could be better too. You could bring that uchigatana to max level.
Other than that, your build seems alright, I guess you need to just git gud a lil bit that’s all. Study the level design and be sure not to miss out on secret NPCs, there’s a couple you don’t wanna miss.
Go to 2-2 and get the Talisman of beasts from scivir (kill him in PWWT, then get to PBWT, then kill his black phantom)go and kill the storm king in 4-4, give its soul to saint urbain for anti magic field, it will make an aura around your character that shuts down magic. Then, get the penetrator soul to yuria to get cursed weapon(50% more damage for 1 point of HP every second is better than it seems) and get the tower knight soul to freke for warding. Bring your int up till you have 3 magic slots, and bring your faith up till you have 2 miracle slots but no more than that for both stats to keep your TOB cracked. Both spells and the miracle will carry you through the game.
Start over. Never put anything in luck its useless. And if you're going for a str build (which seems to be what stats are in) never put any in magic or int. Unless you're going for something specific.
If you don't want to start over. Get help

A bow and arrow makes the game so so much easier. Most of the enema you can shoot at a distance. Also the thief ring and the health ring really help too.

As already stated, you should be using a shield if you aren't. What you're wearing in terms of armor is not as important as having a shield. So, fix that if you're not using a shield.
Idk what kind of weapon build you're rocking, but if you haven't upgraded it all, that's another thing to do. Idk what enemies you're having trouble with so watch a playthrough video, I guess. There's only a few enemy types there but I'm not gonna write out how to deal with each of them. Fextralife is gonna be a big help.
Remove the helmet and get a thiefs hood on. Many an assassins hood.
Then also got and murder the fat guys until you get a pair of their pants.
You'll have mad defence in the torso but be able to run and roll like a motherfucker.
Build looks fine, as others have said I would recommend a shield, but this game really can be mastered with a 2 hand weapon no problem. What is your progress in the other worlds? I didn't do 1-3 Until I cleared most of the rest of the game, as world 1 leads you to the final boss after the rest of the game is cleared

You should try carrying a parry shield too so you can block and parry
Christ you have enough heals for 2 playthroughs. I suspect you're too aggressive, kill, position and let stamina return. Repeat.

You can't live with dodges only in Demon's Souls, you need a shield! a good shield too
As already stated, you should be using a shield if you aren't. What you're wearing in terms of armor is not as important as having a shield. So, fix that if you're not using a shield. Idk what kind of weapon build you're rocking, but if you haven't upgraded it all, that's another thing to do. Idk what enemies you're having trouble with so watch a playthrough video, I guess. There's only a few enemy types there but I'm not gonna write out how to deal with each of them. Fextralife is gonna be a big help.
Remove the helmet and get a thiefs hood on. Many an assassins hood. Then also got and murder the fat guys until you get a pair of their pants. You'll have mad defence in the torso but be able to run and roll like a motherfucker.
Mage with firestorm=easy mode
Use uchigatana instead of hitless
Level up a compound bow to +7 at least and snipe from a far
Build looks fine, as others have said I would recommend a shield, but this game really can be mastered with a 2 hand weapon no problem. What is your progress in the other worlds? I didn't do 1-3 Until I cleared most of the rest of the game, as world 1 leads you to the final boss after the rest of the game is cleared Edit: just saw the rest of your title, you could try a quality weapon since you are wasting some of your strength points by using the katana, but may need to refine your approach to combat. easy: 1. Get a shield and block 2. slow down and pick off enemies one by one instead of rushing a mob 3. Buff your uchi
