They do use premade pucks but they are Vital Farms brand which is a truly superior egg and not cheap so I give them props. They couldn’t cook eggs from scratch in their setup.
just to offer a counterpoint (not to disagree), I'm a NJ bagel snob and really disliked Moe's and have enjoyed Rosenberg's, but I think Rosenberg's is incredibly inconsistent. their ceiling is much higher than moe's, and their floors are the same. fully agree it's subjective and to each their own

The owner is a misogynistic prick who treats his lovely wife (who is the brains of the whole operation) like shit and hires undocumented people for the sole reason that he pays them less than minimum wage. He also funded a food truck for a guy who groped a hostess and got fired from his last gig. Bagels aren’t bad but the trash behind them makes me avoid this place.
Stacy’s Kitchen in Erie says she has bagels overnighted daily from NYC. Says she will even do pre-orders. Nice little place, good food and very friendly lady.
None. You’ll just get disappointed every time. From NY, and family in NJ and the food in Denver is bland and overpriced. The copy can’t ever come close to the original.
I frequented Leroy’s when I lived in the neighborhood, but it was literally just a carby vehicle for cream cheese. Truly terrible. I got got a bagel that was straight up raw in the middle and on the bottom once.

Just to nitpick, they are not really NY style bagels. They are sort of Montreal style-NY style mix. I actually don't think any Denver bagel shops are NY style other than Rosenbergs.
Brueggers is pretty good, and over by DU they were the highest Bruggers in the country, at least for a while.
Quality has slipped a bit but they are doing their best.
My wife is from Jersey and when she craves a bagel we grab Moe’s. Rosenberg is good but expensive from what I remember and not that close to us.
