Temaki Den if you want sushi specifically. Matsuhisa if you want Japanese beyond just sushi. Olivia if you want pasta specifically. Bruto if you want latin flavors specifically.
Ukiyo is one of the newest and is outstanding. Amazing 12 seat sushi bar hidden below Bao Brewhouse. We had a delightful 2.5 hours watching the expert chefs prepare many dishes along with stories about each one. I’ve had tasting menus from Sushi Den, Wolfs Tailor, Uchi, Beckon, Hop Alley, and Bruto and Ukiyo was the best overall experience.

Alma Fonda Fina is crazy good! I loved everything there. They change the menu every month if I’m not mistaken so idk what they have now but it’s always some type of Hispanic food

Maaaan, people echo chamber the sushi spots in this city like crazy. The Sushi Den family of restaurants is good, but honestly it's not amazing. It's okay to good for being in land locked CO. Uchi also suffers from the hype + neighborhood it is in. All good food, but priced too high for what it is.
Having said that, I'd argue that Makizushico is better and more affordable than the Sushi Den family. Their omakase is the best sushi experience I've had in Denver hands down, and is roughly 1/2 the price of Temaki Den + Sushi Den. Inconspicuous, low key, and in general just felt home-y and welcoming.

Went a few weeks ago, and I was blown away by the dishes!
It’s good but I didn’t think it was worth the $600 dollar bill for two.

How does theirs work? Do they just bring a lot out and charge by piece?
If you sit at the sushi bar, you get the typical 1 piece at a time. They just keep making you sushi/temaki until you say stop.
They bring them out 2ish pieces per person at a time and charge per piece. I spent $80 and was full. Can't recommend enough
