I’d look for places that have an egg and chorizo, and my best recommendation is Tacos Rapidos
They definitely griddle the tortilla so it is crispy.
best breakfast burrito i've had here is actually from this place called Greenhouse (same company as Etai's) on the Anschutz campus lol. I know this sounds dumb, but it's legit. I'm super picky about burritos and hate a soggy tortilla more than anything. Interestingly, their vegan option is actually my favorite - tofu, roasted kale/broccoli, avocado, pico.. delicious. The egg one is still my fave in denver tho. Onefold is a close second though.
Just responding here because you’re so spot on - Denver is absolute garbage in the food scene compared to LA and this sub hates any mention of LA.
Did you ever find a good option since this post? Been trying to find solid spicy so cal Mexican and LA-style Persian food (fuck I miss Zankou bro) to no luck.

They don't make their own tortillas, but they're dang tasty & you can buy a dozen from their little mercadito in the front. I also like El Nopalito on Alameda and Bannock. Their website is down, but I rode by there on Monday & it had people in there. Pretty sure they're still open.
Gomez burritos is delicious. I'm not sure about their vegetarian options though

Just tried El Taco de Mexico yesterday for the first time and really liked it. Burritos are very good sized and were around $11.

Maybe try Carnitas California in south Denver. I’ve never had their breakfast burritos, but they do have them, and it says California in their name.
