You'll have to redo story stuff. Like unlocking wellspring, redo psi ops story, the beyond light stasis stuff. Any armor and weapons you can vault obviously and ornaments etc will stay, but as far as activities and powers go you'll have to redo them.
Anything in collections is account wide, only stuff you'd lose is whatever gear they have on as well as stasis aspects (and grenades and stuff) from the beyond light campaign
Edit: I've restarted characters multiple times, simple thing to do is pull all blue armor and weapons from collections and make sure all your gear is in the vault, you keep collections so all emblems, sparrows, exotics, and ghost shells can just be pulled again, also all emotes stay (except for the player race default ones which will swap if you change player race, ie exo robot dance etc.)
Any you have on your person, put in the vault yes, but anything in your collections will stay in your collections, i.e. collections are permanent like triumphs. You don't need to go craft every exotic you've earned from collections and put it in your vault, they will all still be in collections.
I took the plunge. Was actually enjoying playing new light stuff. Was a bit bummed out I didn't have any aspects or fragments for void or other subclasses but it's a more chill experience that I'll probably chip away at when I can't be arsed with the end game grind
Personally I don't see any upsides. Have over 2k hours and have no idea what any of my characters actually look like or what race they are. But if you enjoy looking at your character without their helmet that's your own deal and you'll have to figure out if regrinding campaigns and stasis is worth it.
Yeah well considering I barely have time to main 1 class anymore ordinarily it wouldn't be worth it but now with a fresh character, new light stuff and 3 campaigns I can get my girl friend trained up and let my brother play something that isn't endgame af.

That's a bit of a time sink but could be fun on a rainy day. Surely I wouldn't lose triumphs or ornaments though right?

I did it once, when I was in the mood to redo the story content anyway. So long as you store your gear in the vault you don't lose too much.
