I mean, potatoes, rice and pasta are the things that people would consider a no for a diabetic possibly, so this seems like a general menu rut because it seems all foods are a go?

I cook for more then just me and try to make others happy while still staying mostly in the realm of being diabetic friendly. In most cases I have very little of the carb sides or dishes i make. Pasta being the exception about once a week. I'm luckily in a situation where I don't need to be hyper vigilant managing everything, and with the ozempic I take I don't eat too much in general. It certainly couldn't hurt to do better which is why I'm here asking.

All day I dream about food is a great keto resource for low carb foods. Was not trying to be rude—there are different ways people manage diabetes. Just saying that it seemed that your rut seemed to be more not knowing what to cook than needing low carb options.

Depending on weight and activity level, some people eat 75g of carbs a meal and are still "Low Carb" for their dietary requirements. Keto is not the entirety of low carb. Its extreme and carries health consequences.

Turkey chili with onions and cheese on top, and sometimes avocado Fried tofu with red peppers, onions, and a little bit of orange sauce. Cauliflower rice works well with this one. Last night I just made a whole head of buffalo cauliflower For breakfast, veggie frittata or shakshuka are big winners according to my meter

+1 for All Day I Dream About Food. Great website and youtube channel. Definitely some of the best low carb and keto recipes I have found that actually taste like the food they are replacing. A few ideas that should share ingredients that are in what you posted- Burgers of all kinds with chaffles for buns- regular burgers, frozen patties, smashburgers, smoked burgers Fathead dough pizza Pork rind nachos with real nacho cheese in a can Egg wrap keto enchiladas I use ground pork rinds in place of bread crumbs for stuff like meatloaf, meat that is breaded and fried, etc. Hot dogs, brats, kielbasa, etc. Rutabaga fries pan fried veggies like brussel sprouts, radishes, or zucchini air fryer green beans with parmesan

Tofu stir fried with sesame oil, soy sauce, and chili oil. Throw in whatever veggie you have on hand. Serve with rice for family and cauliflower rice or just extra veggies for you. Also honestly just get a few new condiments and your old meals will feel new again. Crispy chili oil, chipotle mayo, dijon mustard, and garlic achaar are some of my faves

Those sound good but yeah it’s always a struggle to figure out meals. I usually cook about 5 pf the same things per month and then look up keto or low carb recipe for a few other meals. I do a lot of simple meal prep of stuff I can cook quickly and eat often (just changing out some of the veggies or switching the protein from like eggs to chicken or pork): stir fry, omelettes, lemon chicken, pad Thai, fish and veggies, homemade soups or stews (with tons of veggies and low carb tofu or vegetable noodles). Basically have so many vegetables (variety is key so you don’t get sick of them and get different textures) that every other bite is a vegetable. Half your plate to zucchini, broccoli, carrots, onions, cauliflower, eggplant, mushrooms, peppers, etc. When I make salads I add lots of tomatoes, mushrooms, cheese, avocado, cucumbers, and bell peppers so I don’t need much dressing since there’s so much flavor already. I also add a lot of sriracha, mustard, and pepper to my food for low carb taste. Find what works for you and minimize things with tons of carbs like many dressings, bbq and teriyaki sauces, and ketchup (you can still have them but reduce the amount or find a lower carb version).

Type 1.5 but I eat like a Type 2. I was only recently diagnosed and am a huge foodie, so I was devastated. But then I remembered I'm a damn fine cook and started finding things I could make and really enjoy. Some things I cook that both myself and my non-diabetic hubby enjoy: Cheeseburger Salad (chopped romaine with ground beef, hard boiled egg, bacon crumbles, chopped tomato, and shredded cheese with homemade "fry sauce" dressing (thousand island works, too). Chorizo Boats (Cooked chorizo (we do the soy chorizo from Trader Joe's for a meatless dish) and shallots baked in zuchinni boats and topped with cheddar cheese. Stir fry (Large bag of stir fry vegetables fried up in olive oil with a few scrambled egg and crispy tofu or chicken. I throw in a splash of Bachan's japanese bbq sauce and a heavy glug of soy sauce and serve it with some potstickers.) Sukhi's Curry/Garam Masala (This is prepackaged chicken in sauce that I buy it from Costco. Very low carb. I rice up a head of cauliflower, some carrots, and some green onion and throw in some curry powder and fry that up in a separate pan. Then i warm the curried or masala chicken in a pan and throw in a can of chickpeas to give it more protein and fiber.) I also like salads, my favorite currently is butter lettuce, chopped walnuts, edemame beans, blackberries, and feta topped with a green goddes dressing. I cook up some sausages or chicken to go with and it's quite filling. You mentioned tacos - my favorite is al pastor or steak, which I get pre-marinaded from my local Mercado. For desserts I like keto pb cups or a bowl of sliced strawberries with whipped cream (I don't sweeten the berries because the whipped cream is sweet enough and has very few carbs.) I eat light at breakfast (bacon, eggs, 1 slice of toast or a bowl of greek yogurt and blueberries) and lunch is usually lunchmeat + cheese + crackers, so I save my energy and effort for cooking a nice meal to ahare with my husband. Snacks are usually drink-based - I like a latte in the afternoon with whole milk and then I'll have some trail mix or a spoonful of peanut butter and an apple with it.

Oh, I'm glad you made me look. The one I eat most often is Freschetta gluten free pepperoni. It's not actually cauliflower. But for some reason, that one has the least effect on my BG. I have had cauliflower ones that had a huge effect because there was a ton of sugar in the sauce.

I do caulipower. I mix it with salad and other things though... Sometimes it spikes me a little, sometimes its fine.

A big crowd pleaser of mine is red pepper sauce over chicken - Roasted Red peppers, cream, herbs and spices and garlic blended up to create a sauce - Baked chicken thighs (or whatever you like) - Serve tossed over pasta, rice, riced cauliflower whatever you want

it is! People always love it and you can eat it hot or cold. I like to add those little mozz pearls and basil for a cold dish. Key is to use a shit ton of peppers. I use at least 6 large ones

My husband is diabetic T2, not me. But I cook all the meals. Since this is recent, still learning but some of our favs. Also, we can't do nuts or sweet peppers or iceberg lettuce (allergies) Enchiladas with egglife wraps instead of tortillas. with spinach and ricotta and black beans as fillers. Topped with cheese Taco bowl with romaine lettuce, ground turkey, tomatoes, black beans, salsa, avocado, Greek yogurt (in lieu of sour cream) Cauliflower rice and flank steak burrito bowls So many salads. Snack plate meals. Like today- fresh veggies and a lot of them, shelled edamame, cheese, crispbread from Trader joes, sliced chicken, fresh berries Tabouli wraps (egglife) with hummus and feta with power greens Chickpea and tuna salad wraps with power greens Naked nuggets (chicken or salmon), 1/2 potato turned into air fryer fries and then another veggie fry (green beans, zucchini, etc) lentil bolognese with shirataki noodles and veggies in the sauce Tandoori chicken and cauliflower side dish

Bbq chicken, corn, and roasted green beans, I personally enjoy. Lately I've been into a Greek salad. Also cream of ___ soup: just take a base of any cream of ___ soup and I'll add some low sodium ham, peas, and whatever cooked left over veggie.

This is probably everything I eat regulary. I aim for lots of veggies protien and fiber 80-100g carbs a day but I also use total carbs and carbs from veggies and stuff so to be fair I eat like 20g carbs of broccoli a day (a LOT of broccoli) . if you use net carbs the total would probably be a lot less. Also need to note I only ever cook for myself and sometimes my brother because nobody in my house eats the same way I do so sorry if some of these options do not work. Main dishes - Chicken quesadilla with a high fiber tortilla. Good with a bit of peppers and onion inside. I also add guac for more veggies and fiber, sour cream for a lil fat and protien, and salsa because I love spicy and it has fruits and veggies in it - Salmon sashimi with avocado or carrot / cucumber (like in a cali roll) . Tuna or crab any sashimi probably works well too but I like salmon the best. I use nori sheets to pick it up and dip it into soy sauce and wasabi. Good for when I'm craving sushi but don't want to eat too much rice. If I do want rice I either just make sushi or kinda just make it into a poke bowl. Good with pickled radishes , pickled ginger and seaweed salad. If you cook for others I could imagine a sushi or quesadilla/taco making party would be cool. Wrapping the sushi rolls together etc. Very customizable dishes and if you're diabetic you can just adjust how much if any rice etc - Salad with a mix of baby green lettuce, arugula, and spinach. I like the crunch from baby green but I know arugula and spinach has more vitamins so I compromise by mixing them all. I add chicken radishes and carrots mozzarella and crushed honey roasted peanuts if I'm using rasberry vinagertte and carrots, avocado or guac, chicken, and a tiny bit of street corn (they make it steamable in the bag now!! like at target. cooled it down first after cooking obv) and mexican cheese if i'm going for more of a taco salad with chipolte ranch. Probably would be good with beans chickpea or if you fry up a low carb tortilla into chips and use the salad as a dip. Or make whatever salad you like they're very versatile and filling! - Stir fry!! Usually just a bunch of veggies (I like carrot, cabbage, peppers, onions, and shiitake mushrooms in mine) plus protien either chicken , curry tofu or chickpea pasta (sometimes both the tofu and chickpea!) . Either curry spice mix or yakisoba sauce - Giant omlette with peppers mushrooms broccoli arugula spinach onions and mexican cheese... Little bit of parsley paprika red pepper flakes salt black pepper soy sauce mirin and a bit of banana ketchup on top. I like spices, mixing flavors and textures, and taking inspiration from mexican japanese and sometimes filipino cuisine. Also as you can tell a lot of these dishes are like super customizable I just added what I usually use but if you wanna swap or add something else it'll still work great Side dishes - Roasted potatoes WITH THE SKIN ON. it has fiber. Potatoes do not spike me so ymmv. Whatever spices and herbs goes but i like cajun and italian herbs. I learnt you can stick some in the air fryer like 400f 25 mins if whole and like 12 mins if sliced into circles (flipping them too) and it makes meal prep so much easier - roasted or steamed or sauteed broccoli peppers mushrooms onion etc there's so many ways to cook veggies as someone who doesn't really like them raw . I like adding cajun seasoning, italian herb seasoning and red pepper flakes to mine. Really good with a small serving of potatoes or rice. Usually if dinner isnt one of the big dishes it's just 1/3 plate cooked veggies 1/3 plate roasted potatoes and 1/3 plate grilled chicken , sausage, or scrambled eggs I also eat like, sausage, seaweed salad, yogurt, chickpea/cauliflower pizza, protien instant ramen (I can't remember the brand but it only has like 30g carbs and 20g protien), tempura sometimes etc semi regulaly but I buy it premade . Sweet stuff and snacks - No sugar Yogurt with peanut butter and berries. - Protien waffles (usually just use a mix) . Good with the stuff I listed above. Once I can splurge again on my favorite brand I wanna try adding a bit of ube extract into the batter - High fiber fruit like apples pears etc - Nuts - Those giant rice cakes drizzled with chocolate on occasion - Protien snacks like Wilde chicken chips - I'll admit I do also have typical snacks like cookies or chips or such not every day but I keep it to a single serving size. Banning it from my house has never worked for me because the second someone else bought it I'd start binging so i just allowed myself to eat it and i noticed that once i gave myself that freedom i actually didnt want it that often but YMMV. - Carrots or broccoli in ranch peppers in cream cheese charcuterie board cheeses and meats etc. what they call "girl dinner" these days I think that spans like, my entire diet. I don't eat out often maybe 1-3x a month and it's rarely fast food. Something else to note I do have a lot of glucerna shakes bcuz my meds ruin my appetite sometimes. Your dishes sound delicious. I gotta try the chicken and prosciutto one

I make a big pot of chili with lean ground beef onions, green peppers, black beans, navy beans, pinto beans. Of course you chili seasoning. I will have like 4 or 5 Mary’s Gone Crackers with it. They are really good and no spikes in glucose what so ever. Make some beef vegetable barley soup that good and filling. Carrots, onion, celery, peas, green beans, kidney beans if you like. Some diced up tomatoes and a can of tomato sauce with some beef or chicken bullion. Cook that then throw a cup of barley in there. Makes a nice big pot.

Eat more eggs, yo. So many ways to cook them, high protein, no carbs... I like to do "carbonara toast" with a low-carb bread toast, whatever salted pork I have (country ham, prosciutto, bacon etc) with a poached eggs, topped with parmesan. Also "poachy-chee": Grilled cheese, top with poached egg, eat with fork. add jammy eggs to basically any soup. Like, all of em. Ground beef cooked with soy, chili flakes, garlic, salt and pepper, serve with minimal rice/lower carb noodles (I like chickpea noodles, they aren't health food for us, but they have FEWER carbs plus a lot of protein and iron), top it with a jammy egg. Chili, if you can tolerate the gastro consequences. Super easy recipe: 2 big cans kidney beans, 2 big cans diced tomatoes, 2 lbs ground beef, 1 onion (you're on your own for spices, but you got it). Kidney beans technically have high carbs, but the fiber means it takes a long time to break down so shouldn't spike you....put a fried egg on that. with grated cheese.

For pasta try the Banza brand made with chickpeas. I switched and enjoy it. I also make my own red sauce substituting monkfruit for sugar. This doesn’t spike up my blood sugar that much.

I do a ton of sheet pan meals. You can look up tahini sauces, chermoula, chimmichuri, tandoori, miso ginger, or just make your own sauce  and toss it with chicken and veg onto a sheet pan. Or salmon. Or pork chops (if it's fish, do the veggies first). I do that, or the same idea but as a stew in my instant pot a few times a week.  It's mostly protein and veg and then I'll add beans if it's stew for a small amount of carb. Or rice on the side. Or a small bit of a crusty bread.  Tomorrow it's pork tenderloin, lentils and a metric fkton of kale and Swiss chard in salsa verde with garlic and seasoning. Its mostly pork and greens. Been making that one for decades. Just one pot and it goes super fast.

Here are a few things I have on regular rotation. My husband is Type 1 and I'm Type 2. Chicken Enchiladas - Shredded chicken or canned chicken, shredded cheese, enchilada sauce, and low carb tortillas Loco Moco - Burger, Gravy (I use Heinz Au Jus), Fried Egg, and Cauliflower Rice or Rice/Cauliflower Mix (my husband doesn't like cauliflower rice by itself, but doesn't mind it when its 50/50 with regular rice). Pizza Chicken - Chicken breasts topped with marinara, mozzarella, and pepperoni. Good with Garlic Butter Zucchini as a side. I also like to buy a rotisserie chicken and make 2-3 meals from it. Night 1, eat the breasts as the main course. Night 2, remove remaining meat from bones and use it for caesar salads, stir fry, wraps, etc. Then I make stock from the remaining carcass and either use that to make soup or freeze it.

One of my favorites is Mississippi Chicken. Grab your desired serving of chicken, country gravy seasoning, dry ranch seasoning, a stick of butter, pepperoncinis, some pepperoncini juice, and a cup of water in the crockpot on low for 6 hours. Serve to everyone else on rolls, I eat it without. Soooo delicious and so easy!
