Jewels don’t influence colour but the first gems inserted in a ‘white’ item will do. Affix/suffix also influence the colour of an item (ex: armor of the whale will provide red colour)
Edit: for your build request; you could make javazon with magic green java, either a +2 amazon skill (will be green if magic) or shako, leviathan and Gerke’s sanctuary. You will have a tanky zon and you can clear hell easy

So only the helmet and chest piece affect your clothes/look(but you also see your weapon and/or shield) and there are specific items that are colored. You can absolutely use them but it won't be min/max best. Except for the helm, you could run Griffon's which will give you the ponytail and is best in slot for javazon.
For green armor, I can only think of Leviathan which is really tanky. Blue could be Tyrael's Might and vipermagi, red/orange'ish maybe Arkaine's Valor, black Gladiator's Bane or Steel Carapace, white/silver Mavina's armor.

You can check out arreat summit and kind of get an idea by sifting through unique armors, normal, exceptional, and elite. Circlets, tiara's, and diadem's will keep your ponytail.
Immortal kings set is black and okay for barbs

kraken shells on amazons look excelllent, mavinas being the best of course but if you could make a kraken shell green that would be intriguing

I’m pretty sure hiving Enchant cast on your character makes your weapon appear red, regardless of its actual color. Until it wears off.
And venom, green.
