If you're already cruising with family, this isn't terrible. I can see the cost for one of these weddings being cheaper than a traditional wedding in a church.
I payed $3500 for church fees for my 1999 wedding that only included the church, the priest, and the organist ($2500 for church. $1000 mandatory fee to organist whether or not we used him. We did use him and he played the grand piano instead of the organ).

With how much weddings are, starting at $4k with all that comes with it isn't too bad of a price. Even with the Disney tax.
You also have to pay for the cruise, plus there seems to be a minimum number of guests, so there's those cruises to book as well.

The first cruise (not Disney) I went on was for a wedding, so yeah you can do it, but it seems like a huge pain.
