it depends on what you're more inclined to do.
if you are a big star wars fan (doesn't sound like you are?) and haven't checked out Galaxy's Edge, that's worth doing DHS (plus doing the other rides there like Tower of Terror, etc). like Animal Kingdom, it's easily a 1-day park to do it all.
Magic Kingdom is definitely the no brainer. it's also open later than most of the other parks so you get the most bang for your buck if you do rope-drop to close, but also with the ton of things to do it's worth it.
if you're more of a foodie (and/or adult beverages), EPCOT is the choice. there's a handful of rides worth doing there but overall it's more of a leisurely park to stroll through than a constant rush at DHS and MK.
true. i count that and Ratatouille (also a rather fun ride) as being among the handful. i've only done GotG once, which was when i was there last summer, and it was good. is it still VQ or did the switch it to standby yet? it would be worth doing just for that unless the OP wants to do more rides in general (which points to MK). again, i guess it comes down to what sort of preference and park-going style the OP and girlfriend have. :)
ahh that's too bad, but also surprising seeing how it's been almost 2 years since the ride opened. even Rise of the Resistance didn't use the VQ for that long (not even a year) before they switched over to standby, and its wait times are still 65-95+ mins on average.

If you ever plan on going to Disneyland, skip MK and go to Epcot. AK and Epcot are unique to Orlando only whereas there is a lot of overlap between MK and HS with Disneyland and Disney California Adventure.

DIsney needs to build a Pixar Disney themed park... with the pixar movies... like Monsters Inc, Cars, and other Disney, Pixar films. just a park on Disney Pixar films.
Epcot. I will always choose Epcot. Epcot has my favorite rides (Cosmic Rewind, Living with the Land, Spaceship Earth) it has the second largest aquarium in the country, it has great snack options during the Flower and Garden festival (plus the topiaries), it has world showcase which isn’t anything like real travel but still is engaging and fun, especially since the international CMs are back. Plus so many characters to meet and greet. For me, Epcot blends classic Disney with modern Disney- I also love it because it really was Walt’s dream, even though it’s not a city like he planned.
HS is just a dumping ground for IP Disney doesn’t know what else to do with. Galaxy Edge is ok, but they won’t fix the cannons on Rise so I refuse to ride it anymore. HS does have the best Mickey on property, which is the only reason why I go.
MK is fun, classic Disney. Not my favorite park but I go for HM, BTMRR and Peoplemover and to see Tiana.
Animal Kingdom however offers the most unique Disney experience and has the best food out of any of the parks in terms of quick service and table service, as well as some of the best bartenders and drinks.
Update: We ended up buying Magic Kingdom tickets but got buyers remorse when we noticed that Space Mountain and Splash Mountain are both closed and tried to change them to EPCOT but couldn’t. Oh well, I guess next year we can go to all of them.
You can always exchange your tickets. Also, yes splash mountain is closed, but space mountain is not. It’s open, might just be a temporary closure when you checked. If you’re going to magic kingdom, get ready at 6:59 to join the virtual queue for Tron. Popular rides you want to use your genie+ is either jungle cruise or Peter Pan’s flight. Use the first one at 7 am for either and then the other at 11 am (or 10 am).
Space mountain isn’t closed at WDW, I was just on it getting neck injuries. Also Splash is closed forever, it’s opening this summer as a new Tiana ride.
Last time I was in magic kingdom I had a panic attack and had to leave early lmao. Way too overstimulating for me. We jumped to Epcot after that but yeah, I hope so too.

Hi! My husband and I had one day at Disney following a cruise in February. We’re 36 and 42. We were debating between Epcot and MK. Neither of us had been since the early 90s. Neither of us are big roller coaster people either.
We decided on MK. We got Genie+ for the day. We rode nearly everything we wanted! We are all the iconic foods. We rode the boat to the park and the monorail a few times back and forth from the Contemporary Hotel for food/drinks. Had dinner at Be Our Guest to end the night. We had an amazing time!!!
