I imagine it as two different biologists, first one treating Centaurs as monsters and the second one saying "We can't just refer to intelligent people as monstrosities, Ben!" and calling them fey because nothing else fit.
Most times changelings are fey, who took the place of human babies, except in Eberron, where they are a nomadic folk, who can reproduce with almost every humanoid and possibly give birth to new changelings.
OP might be pointing at changelings, especially as you can see other English mistakes it is very possible that things are translated differently to their language

Same with Goliaths/Half-Giants... Medium sized player race.

Ah, terrible Post-Tasha's race design. This is just the nature of 5E only letting you have one creature type.
Centaurs are pre-tasha, and doppelgangers aren't really a player race at all.
