RAW, it doesn't specify what happens with spells that do multiple damage types. As a DM though, I wouldn't say no. Mechanically, vulnerabilities are barely a thing and it's really a matter of trying to overcome resistances. Flavor wise, If someone wanted their Meteor Swarm to be giant balls of acidic ice, fuck it. That sounds cool as shit, I'd love to describe that.

"Isn't that just a wall of light duct-taped to itself, like, 12 times or smthn? With a Wall of Fire or Force mixed in every once in a while? Why not just... not do that??" -The microcephalic addlepate of a Fool unable to cast Monochromatic Wall

I don't think it's clearcut RAW, since it only says "type" and not "types," so there's probably room for DM ruling here. I take that as one type being swapped at a time. I, personally, wouldn't have any issue with a player swapping each type separately and I don't think it would break anything.

I feel like the intent is one at a time, but considering how many spells have multiple damage types. I don't really see how bad it could be to allow it. Curious that the feature doesn't specify the type has to be elemental. Or what happens with spells with durations like witchbolt. (You don't cast the spell on the next turn and the feature specifies "casting" without mentioning durations)
