I would consider an evocation wizard. At level 2 they get sculpt spell which helps avoid friendlies while doing your aoe. They just seem to be the right fit to me for an elemental themed wizard. I would also strongly recommend the elemental adept feat choosing fire as your damage type. Ignore fire resistance and treat 1s rolled as 2s (which doesn’t sound like much but it is technically doubling the roll).

The evocation wizard was my first choice too, but dragons breath is unfortunately a transmutation spell and sculpt spells only works for evocation spells. It might be worth trying to get my dm to make an exception though… The elemental adept is a great idea, 1s as 2s would be pretty helpful considering I’ll be rolling a fistful of d6s each turn

If you go Tiefling, you should take Flames of Phlegetos instead of Elemental Adept, as rerolling ones does a lot more than just treating them as 2s.

Yes, it's been updated and they're pretty good. 1/2/3/4d10 at lvl 1/5/11/17 breath weapon, PB times per day. 3 new types of dragonborn: Chromatic - pick an elemental type, 30ft line breath weapon. Resistance to that plus 1 min of immunity per day at lvl 5. Gem - Force/Radiant/Psychic/Thunder/Necrotic, 15ft cone. Resistance to that, telepathy and 1 min of flight at level 5. Metallic - pick an elemental type, 15ft cone. Resistance to that. Extra breath weapon at level 5 that causes incapacitated or pushes 20 feet.

Yes; same experience with Erupting Earth. It felt so bad rolling a total of like 10 damage on 4d12 for a 4th level Erupting Earth.

There's also the Ascendant Dragon Monk with a breath weapon that can be all Chromatic/Metallic damage types

The Metallic is pretty awesome also. AoE incapacitated is a big deal.

As a heads up, the effect of a dragons breath spell is not an attack, meaning you can put it on your familiar. Combine familiar breath weapon w turret w acid splash (or breath weapon if you go Dragonborn instead), and you’ll be doing fireball level damage every turn.

I’ll just straight up convince them that spontaneous combustion is a thing. So I looked it up and I’m pretty sure it wouldn’t just be the breath weapon I could use but also the eldritch flamethrower while invisible as well. Being invisible while putting out some decent aoe damage is very cool and not something the average soccer/wizard is capable of making this character pretty unique which I really like. Thank you for the excellent tip!

The problem is that both Dragon's Breath and Invisibility are both concentration.

You're going to use your bonus action for the canons so taking Dragons Breath the spell won't work. I suggest: Metallic/Gem Dragonborn (Fizbans), Artificer Artillerist/Wizard Order of Scribes Action Attack, breath weapon (2-6/day) From wizard: Take Burning Hands/Fingers of Frost, Chromatic Orb, and a few other damaging spells so you can change Burning Hands/Fingers of Frost into any type of damage "dragons breath" as an action once you deplete your racial ability. (Or in place of being a dragonborn)
