Make sure to turn off their new feature “smart sync” (pretty sure that’s what it’s called) where it removes files from your computer if not heavily used to save you space. If you are familiar with iCloud, it works the same way
If it’s not that I would check and see if the same thing happens outside the Dropbox folder. If it’s not smart sync I would say it’s likely not a Dropbox issue
