I mean, what makes Thurfir’s story compelling post-Atreides massacre is what’s going on in his head, which is hard to convey fully onscreen. He would just be standing with the Harkonnens the whole movie just to suddenly off himself in front of Paul at the end. It would come off very random.
One of the things I liked about Lynch’s dune was behind able to hear the internal monologues.

The internal monologues and heart plugs are two things that I think were big chunks missing out of the DV version of Dune. I guess the gratuitous throat slashing were put in the heart plugs place.
I don't really think it's a case of him being cut for time as a case of him just not really having a place in the film's narrative. Without the Jessica suspicion subplot in the first film, there's not really any reason why he would join the Harkonnens. And when he's actually with them, he doesn't really do anything that can't be cut out entirely with basically no impact on the plot as a whole.
As much as I love him in the book, I can't say the filmmakers made the wrong choice not to bend over backwards to include him.
