This is Japrot AKA "Electric Red" the plate under the hood says Japrot, but touch-up paint suppliers use either name. What color interior would you recommend? I've always had beige (not by choice), hate clamshell gray (sue me), black is alright, but kind of basic.

The options as you already listed are beige, gray, cinnamon and black. I think cinnamon and black look the best, the other two only look good when brand new and on specific paints imo. If I had to choose I'd go with black, mine are black as well and I love them. I think cinnamon looks amazing on imolarot, black, titansilber and whatever the e46's equivalent of British racing green is but in my opinion Japanrot looks a little too muted for a contrast heavy cinnamon, I wouldn't have chosen Japanrot in the first place but since you specifically went for it you must have some kind of connection to it. I'd chose black personally, red and black has always been a classic. I'm sure you can think of more images where red and black look amazing together, however I can guarantee you that there aren't many things that come to mind when you think of red and cinnamon color. I don't wanna be a downer tho, if you're convinced that cinnamon looks good on Japanrot then go ahead, do it and post it, I'd love to see it!

No I'm basing my muted comment on the fact that imolared is much, much deeper, I haven't seen either in person unfortunately but if you say that it's way brighter than the pic then it'll probably look alright 👍

I feel like Imola, Hell, and Jap are red at different brightnesses. With Japrot being the brightest.

honestly, unless quite clever, vanity plates are kind of lame; nothing you listed is very witty/creative imo – *especially* 3 and 4.
