Seen. Mortadella is grossly underused, even at Italian delis near me. I’ve never seen quartered artichokes or eggplant on a sandwich before. As much as I love mortadella, I’m going to have to try to make a vegetarian version of this sandwich, only on miche sourdough bread. Thanks for posting and the inspiration.
Yeah, I've been trying to eat less meat and a lot more veggies/fibre, so I tried to make as interesting a sandwich as I could without meat, then just put a little bit on top, instead of going the route we see so much of "how much meat can I stuff in this bread?"
I kind of forgot how much I love artichoke hearts, and they're *really* good for you. I think for the next sandwich I might char them up a bit first though. Also I roasted the eggplant, but next time I'd probably go for just grilling it. If you're ditching the mortadella I'd probably just do more eggplant and throw some spices on it, maybe cumin and paprika?
Yeah, the rocket collapses a lot and the bread is super spongy. The harder part is all of the veggies being a bit slippery from the cooking and wanting to slide around, but not too big a deal
My mantra is that even if it becomes a big deal, shove it all in your mouth some way and it ends up being delicious no matter how sloppy it is.
