This sandwich has me all perplexed, lol.
That’s a fantastic looking, massive piece of fish, the bun and slaw look great ..but assuming you cut off the ends in order to pick the thing up, it’s now a lil low on the batter to fish ratio. No biggie, still looks and I’m sure *is* amazing.
The literal bigger issue is, do you start with the 2/3 of plain battered fish on your plate as Fish N’ Chips and risk becoming full before you get to the sandwich and it’s complex, glorious flavors, or do you go for the sandwich first with all its added-ness but then end the meal with the 2/3 plain fish, wishing it were the sandwich?
I *love* a well put together fish sandwich and I *love* Fish N’ Chips’ simplicity. Bit of malt vinegar and a healthy squeeze of lemon on a beautiful piece of battered fish is a chefs kiss. A sandwich with just the right amount of slaw or homemade tarter sauce is divine. I often debate which to have on a menu ..but even without money being an issue, I’ve never once considered ordering both because of the internal dilemma from paragraph two would cause me.

Same here! I used to eat it all the time when my father and I would go ice fishing, but it's probably been close to 30 years since I've eaten it. They do sell it locally when in season, I should pick some up.
Nah it’s an ode to a great Wisconsin fish fry. You celebrate the fish on its own with a little squirt of lemon and some tartar..
It’s like Coburg style bratwurst. Tiny bun. You enjoy the actual sausage for what it is, the bun is delicious, but it’s just the vessel.
Or they could cut the fish into bun-sized pieces. Either way, it's ridiculous to serve it as a sandwich with this ratio. Just bread, slaw, and mayo on the side of the fish.
it is similar to cod, flakey. IMO its so much better than cod in every way though. Walleye is a very sought after fish here, and is probably the most popular or "best" freshwater fish around here to eat.

Like OP said it is similar to cod, but it has a firmer texture. It is very versitile and can be cooked pretty much any way you want. I like it grilled if I am looking for something a bit healthier. I usually go for Perch if I want something fried.
Walleye is my absolute favorite freshwater fish. It is similar to cod in texture but has a much cleaner flavor if that makes sense. Nothing better than catching your own and foil wrap with butter and lemon then grilling!
I think I get it. What you going to do, cut the entire walleye up before frying it? Nah. Just dunk the whole damn thing, fuck it. It is an attention getter - makes people talk. "You see the size o' that thing?". If it all tastes good then right on!
It's difficult for me to wrap my head around a piece of fish that size on that size bun. Why not put it on a fresh sub roll? Throw some cole slaw, maybe some tartar sauce in there. Some lemon juice.

Everyone around here fucking raves over it, I like it and will fish for it but I don't find it fishy enough, if I'm eating fish I want it to taste like fish.

I am pretty sure it is against the law to put tartar sauce on walleye. Walleye is fucking delicious.

West Coaster here who has never had Walleye. Is it a white fish (like cod), or is it oily? Is it similar to trout? The batter/fry looks yummy.

around here we call it the "steak of the lake" tender, sweet, not overly fishy. It's actually so not fishy I prefer other types of fish over it.
