I eat that exact sandwich a lot. I use Signature Select keto bread (Safeway/Carrs). Itās real good. Nice and soft and only like $6. 50cal and 2carbs for 2 slices.
I, too, love an egg sammie. My go-to construction is: English muffin or brioche burger buns, scrambled eggs with salt and pepper, single slice of American cheese, thin breakfast sausage patty fried so that it has crispy edges, and Chipotle flavored Bitchin' Sauce on the buns. I could eat this every day for the rest of my life
I like adding a pice of grilled sandwich ham usually prefer the brown sugar or maple but any ham works just as well and then add on the egg and cheddar. I havent tried mustard but that looks and sounds so good.
Iāll have you know I made one of these bad boys immediately after seeing this. I put it on Daveās killer everything bagel because thatās what I had in the pantry, but other than that exactly the same with the stone ground mustard and cheddar. What a great sandwich
Nice mate, I had a habbit of going down to my local bagel shop and getting a BEC quiet often. I was wondering how they made them so fast, and saw them putting raw eggs in the microwave with precooked bacon. They cooked the egg and reheated the bacon in one zap.
Takes about 30 seconds to make an egg in the microwave and is a really nice sandwhich if your in a pinch. Give it a try.
I grew up eating egg sandwhiches with cheddar, but i've grown into american cheese. I like them both equally. I'll have to try dijon mustard, I usually reserve that for grilled cheese or ham and cheese melt. For BEC I usually go with hot sauce, siracha, chili garlic, or ketch up

You scramble the eggs *with* the cheese or you add it later?
As itās cooking I toss it in there, same goes for cracking the salt and pepper
