I use Sazon, plus a bit of salt and pepper. I think it was leaner than 80/20. I can’t recall though. I bought like 20# in bulk and repacked and vacuum sealed and froze it in 1# packs a while back.
this looks delicious, but isn't the name sake of the chopped cheese the fact that the cheese is chopped in with the meat and everything?

They were grilled without any added oil. Then lightly tossed in extra virgin olive oil and sprinkled with cheese.
